  • Evenly sprinkle the Za’atar spice blend over the zucchini in the bowl. Start with the suggested amount and feel free to adjust to your personal flavor preference.
  • Drizzle the extra virgin olive oil over the seasoned zucchini. The oil acts as a binder for the spices and helps promote golden-brown roasting.
  • Toss everything together thoroughly with your hands or a spatula until all the zucchini pieces are fully and evenly coated with the fragrant Za’atar and olive oil mixture. You can always add a bit more Za’atar or olive oil if desired.
