  • 1/2 cup avocado oil or extra virgin olive oil
  • 1/3 cup lime juice freshly squeezed
  • 1/3 cup white wine vinegar or regular white vinegar
  • 4 cloves garlic fresh, minced
  • 1 tbsp agave nectar or more, to taste
  • 1, 7oz can Chipotle chiles in adobo chiles separated, seeds removed (save adobo sauce)
  • 1/2 remaining adobo from chipotle chiles

  • Carefully remove only the chiles from the can of Chipotles. Reserve the remaining adobo sauce for later steps.
  • To manage the heat and ensure a smooth dressing, remove the seeds from each chile.
  • Transfer the seeded chiles to the bowl of your food processor or blender.
  • Add the remaining ingredients: avocado oil, white wine vinegar, fresh lime juice, garlic cloves, half of the reserved adobo sauce, and a pinch of kosher salt.
  • Process until the mixture is completely smooth and emulsified. Scrape down the sides if necessary to ensure all ingredients are well blended.
  • Taste the dressing and adjust for salt if needed.
  • Add the agave nectar and pulse a few more times to incorporate. Taste again and add more agave if you desire a sweeter dressing to suit your personal preference.
