Whenever we host a large group for a Pasta night, this platter is an absolute must-have. It’s non-negotiable! It sets the perfect tone, inviting conversation to flow freely over a glass of fine wine or a refreshing cocktail. Everyone invariably finds their favorites – for me, it’s always the crisp red cherry peppers, the briny olives, and, of course, a selection of delicious cheeses. Half the joy of this platter lies in its creation, meticulously building the spread and discovering the ideal assortment of antipasti to tantalize guests. My personal journey with antipasto began when we resided on the East Coast, in Massachusetts, surrounded by incredible Italian-American restaurants where various forms of antipasti or antipasto were always prominent on the menus. My husband and I have always loved entertaining; what started with casual beer parties in our younger days evolved into more sophisticated gatherings as our palates matured. When curating The Ultimate Antipasto Platter, my primary goal is to achieve maximum variety in flavors, colors, and textures. The foundation, however, always rests on a glorious trifecta: succulent meats, rich cheeses, and an abundance of vibrant vegetables.   • Red cherry peppers – 8 pieces
  • Grilled, marinated artichokes – 8 pieces
  • Olive mix – A generous cup of your favorite Italian olives, such as Bella di Cerignola, Nocellara, or Leccino, for their rich, briny flavors.
  • Italian giardiniera – 1 cup
  • Roasted red peppers, cut into strips (homemade or store-bought) – 1 1/2 cups
  • Balsamic roasted eggplant + zucchini – 3 cups (use my recipe, or readily available store-bought frozen options, or from a good deli). These add a soft, savory depth to the platter.
  • Pan-roasted mushrooms – Sauté 8 ounces of cleaned, whole mushrooms with one clove of thinly sliced garlic in 3 tablespoons of olive oil until they begin to sizzle. Add 1/4 cup of dry white wine or water and cook until the liquid evaporates. Continue to pan roast for about 10 more minutes until tender, adding extra virgin olive oil as needed. These can be served warm or at room temperature, bringing an earthy, umami flavor.

I highly recommend using a very large platter; the one pictured, measuring 14 by 18 inches, is about the size of a turkey platter and provides ample space to arrange your ingredients without overcrowding. Begin by placing your larger, roasted vegetables, creating a beautiful and colorful foundation. For items that have more moisture, such as olives, marinated mozzarella, or giardiniera, place them in small, elegant bowls nestled amongst the meats, cheeses, and other vegetables. This not only prevents liquids from mixing but also adds an appealing visual texture to the spread. Arrange your cured meats artfully, perhaps fanning out slices or rolling them for easy grabbing. Finally, add garnishes like fresh basil leaves or sprigs of rosemary to introduce a fresh aroma and vibrant color, making your platter truly spectacular.

How to Estimate Servings

The serving capacity of your antipasto platter can vary based on its size and the number of other appetizers offered. A platter of the size described (14 by 18 inches) will comfortably serve 6-8 people as a single starter. Ingredients

  

Balsamic roasted vegetables (optional)

  • 1 recipe Balsamic Roasted Vegetables or prepared, store bought

Pan roasted mushrooms

  • 8 ounces mushrooms, whole white, cleaned of debris
  • 1 clove garlic sliced
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup dry white wine or water

Antipasto ingredients

  • 3 ounces Calabrese salami slices separated
  • 3 ounces Capocollo slices separated
  • 3 ounces Proscuitto torn into smaller pieces
  • 8 ounce Rolled mozzarella cheese with salami sliced
  • 8 ounce Smoked mozzarella sliced
  • 8 ounce Marinated mozzarella balls
  • 8 pieces Red cherry peppers
  • 8 pieces Grilled, marinated artichokes
  • 1 cup Olive mix, Italian Bella di Cerignola, Nocellara, Leccino or any Italian olives that you prefer
  • 1 cup Italian giardiniera
  • 1 1/2 Roasted red peppers cut into strips (homemade or store-bought) – 1 1/2 cups (if you are making the Balsamic vegetable recipe omit)

Instructions

 

Balsamic vegetables (recipe)

  • If you opt to grill or roast your veggies, give yourself an extra 30 minutes for them to cook. Additionally, roasted vegetables from the deli counter or frozen aisle work quite well for these platters.

Pan roasted mushrooms

  • Prepare mushrooms by brushing off any debris from mushrooms. Make sure any dirt is completely removed from the mushrooms.
  • Add olive oil to the pan, add mushrooms, and sliced garlic. Allow to start mushrooms to start sizzling. Sauté the mushrooms and garlic.
  • Add 1/4 cup of dry white wine or water and cook down until wine or water evaporates. Add extra virgin olive oil if needed.
  • Pan roast the mushrooms for about 10 more minutes until tender. Remove from heat.
  • These pan-roasted mushrooms can be served warm or at room temperature.

Antipasto

  • Using a large platter, start arranging ingredients one at a time.
  • Arrange the meats, red peppers, red cherry peppers, cheeses and vegetables.
  • For ingredients that have more liquid, place those in small dishes and arrange with the platter. Examples that require small dishes are olives, marinated cheeses, and the Italian giardiniera.
  • Once all the antipasti are arranged on the platter. Add some grissini and some crostini in a bread basket.
  • Enjoy!

NOTE: If you are grilling or roasting your vegetables for the platter, give yourself an extra 30 minutes and start there.
